Sweet Pork Recipe

If you're like my husband you LOVE Cafe Rio's sweet pork. I myself am not a fan. Sweet meat? It's just weird to me. But this is the recipe if you'd like to try it out and I actually don't mind it. Hope you enjoy!

SWEET PORK
2 pounds pork
3 cans Coke (NOT diet)
1/4 c. brown sugar
dash garlic salt
1/4 c. water
1 can sliced green chilies
3/4 can enchilada sauce (I used Old El Paso brand, medium spiciness)
1 c. brown sugar

Put the pork in a heavy duty ziploc bag to marinade. Add about a can and a half of coke and about 1/4 c. of brown sugar. Marinade for a few hours or overnight.

Drain marinade and put pork, 1/2 can of coke, water, and garlic salt in crock pot on high for about 3-4 hours (or until it shreds easily, but don't let it get TOO dry). Remove pork from crock pot and drain any liquid left in the pot. Shred pork.

In a food processor or blender, blend 1/2 can Coke, chilies, enchilada sauce and remaining brown sugar (about a cup, you can add a little more or less to taste..). If it looks too thick, add more Coke little by little.

Put shredded pork and sauce in crockpot and cook on low for 2 hours. That's it!

Bed Time Stories

Every night Scott reads a story to Mad (well, when she allows it). Last night he was reading her "Pinkalicous." I was in the office on the computer listening to him read to her and I was laughing so hard because Mad the whole time was just yelling. Not an angry yell but an "Hey Dad, stop reading and pay attention to me." I could hear Scott saying to her, "Hey, stop kicking me! Listen to the story." I popped my head into the room and they were laying on the floor and Mad was on her side just yelling in Scott's ear and kicking him. It was hilarious. For such a small baby she is so loud. Sometimes we have to turn the volume up on the T.V. cause when she gets going there's no stopping her. Just wanted to share this funny little story. Hope you enjoyed it :0)

Top 17 Reasons Why Scott is the Best Dad/Husband Ever

1. He gets up in the middle of the night when Mad cries.

2. When I complain about my stretch marks he tells me to shut up. And when he says this to me he says it like I've offended him.

3. He's the only one who Mad will laugh at.

4. He rubs my head.

5. He gives us girls everything we want.

6. He brings home cute little outfits for Mad that always say something about her being daddy's little girl or how she'll always love Daddy.

7. Every night he reads Mad a story.

8. He brings me ice cream and doesn't tell me so when I come home there's a nice surprise in the freezer.

9. He loves his girls more than anything.

10. He watches all 10 Harry Potter movies with me back to back and loves it.

11. He plays this chipmunk music version Lady Gaga, Kesha, and Katy Perry for Mad. It's awesome.

12. If I need to get some where I've never been I pull up Map Quest and I tell Scott to look at it and put it in Laman terms for me. And he does.

13. He assembles all things that need to be assembled.

14. He changes poopy diapers.

15. He secretly takes Madison on Four Wheeler rides even though I forbade it, thus... making me miss her first four wheel ride ever!

16. He lets me hold the remote on special occasions. Like my birthday... yeah... that's pretty much it.

17. He secretly puts Pepsi in Mad's bottles. JK. I'd kill him if he did that. But he is addicted to Pepsi. And it's kind of cute.


We love you! Thanks for always being such a great Daddy and Husband. We would be lost without you... literally.... you know I have no sense of direction.

Mad's blessing

Well, I've been trying to think of things to blog about and I thought I never blogged about Madison's blessing, so I'll post some pictures and what not. Mad was blessed on May 2, 2010. Scott blessed her. His Dad, brother -in -law and our Bishop were in the circle. We didn't invite too many people cause we didn't have enough room in our house for them! My parents, his parents, little sister, older sister and her family, and my best friend and her husband came. It was lovely. It was fun to have them all together. We're so lucky to have great friends and family around us! Mad looked so cute in her big poofy dress. I think she was feeling pretty proud of herself. Even though she can't really sit up on her own, I'm pretty sure she was sitting a little taller that day. Scott was so nervous to give her the blessing but he did great. Here are some pictures from that day...











Other than that, there's not too much new going on. Scott's going to finish up his last semester of school. We're both just working away. We bought our town home in October and we love it! Mad is continuing to grow and grow and grow. Here are some of the new things that she has discovered in the last couple of weeks:

1. Rolling her tongue. She LOVES rolling her tongue. She just discovered this last week and she does it all the time. It's so cute.

2. Her toes. We got her one of those Bumpo chairs and while sitting in it she discovered her toes. She loves touching them and trying to suck on them. By the way, she has stinky feet. Because she's a little baby it's very cute. She loves it when I smell them and then pull my head away really fast while fanning my face. She thinks it's quite hilarious.

3. She now laughs... well, kind of a loud chuckle. She loves when Daddy tickles her ribs with his mouth. She laughs so loud at that. He's the only one who can get her to laugh. It's happy for him but sad for me. I try so hard to make her laugh and it never happens.

4. Yelling at her toys. She has a few favorite toys, however, Scott and I can only let her play with them for so long because she starts screaming at them and pulling their legs really hard. Then she starts crying hysterically. It's funny for a few minutes than just annoying to listen to.

5. Rolling over. I know that I said earlier that she has mastered rolling over but now her new thing is to roll over onto her tummy and then to cry hysterically because she has yet to master rolling from her tummy to her back. She rolls onto her tummy and then looks at you like you put her there and are the reason she's distressed.

Growing...

So, in the last few days Mad has starting rolling over. The first time she rolled over was back in early May. Since then she's rolled over a few times but nothing major. In the last two days Mad has begun to roll over a ton. It's her new favorite thing. She has also begun to try and sit up. It's so cute. She looks like she's doing a sit up. She's trying so hard but isn't quite ready for that. Which is good because I'm not ready for that! She is growing up so fast it blows my mind. She's already 4.5 months. Where has time gone? Last night she giggled at me and it was the cutest thing. I just love my little girl!
